we went to the mca denver this afternoon
& saw the damien hirst stuff... a cow all slung
up and arrow'd, and butterflies stuck in shiny paint.
then we shared a red velvet cupcake and a latte
on the roof. i wish they'd had a unicorn. it had been super
windy all day and my knitted cap almost flew away
across the riverfront park. i have like 30million
presentations to make next week, somehow, so
i should get reading... i wish the daylight lasted
longer, i miss taking pictures. maybe i should buy a light kit?
or wake up earlier.

making stuffed bell peppers for dinner.

1.5 lbs red potatoes
4 bell peppers
1 tsp coriander seeds
1 tsp cumin seeds
1/4 tsp cayenne pepper
1/2 of a minced green chile
2 tblsp cilantro
1 tblsp fresh mint
juice of 1 lime or lemon
1 tsp salt
1/4 tsp pepper
1 egg
2 tblsp olive oil

peel, dice and boil potatoes, then mash
remove tops and innards from bell peppers
toast cumin and coriander seeds in skillet 1-2 minutes, then grind
add cumin & coriander to potatoes, + cayenne, cilantro, mint, lime/lemon juice, salt & pepper & stir, then spoon mixture into bell peppers
oven 400, heat oil in skillet, dip peppers in egg (whisk it with a pinch of cayenne & salt) cut side down & cook 3 minutes, then turn over and put the skillet in the oven 30 minutes (bakes @ 400)

* NOTE: after having made them, i think it would be better if you skipped the egg step entirely. it isn't as hard to make as it sounds and they taste so good! we'll try it again.
